    Specialty coffee defined itself as coffee with additional value. Professional barista in specialty coffee are people who add extra value to the served drinks/coffee.

    To us, competition is where we can bring our thoughts, theories, philosophy, researches to public with the most respected way.

    We often hear that competition is where barista serve the best coffee but also, competition is not realistic. We would say it is not realistic because it is futuristic and leading where industry will go upcoming decades by pioneers.

    Competition format is keep changing from the beginning but one thing never changing is competitors attitude. We willing to serve the best version of coffee we can serve, we aiming to win, we willing to present something new and better. 

    Logical brain & Artistic stage Producer’s mind

    To do this, we need to do research either it is build original or learning other people’s work and modifying it.

    The process requires making hypothesis, planning and performing experiments, flavour evaluations, analysis both numerical value and sensory values.

    More often it turned out the hypothesis is incorrect or the impact of variable is not meaningful.

    But when finally found some meaningful outcome, make logical way to explaining the result, shaping and shaving down to digestible speech that judges can understand in limited time with lots of tasks to do.

    When it coms to Barista Championship, this technique has to be tied into the theme of the presentation which connecting three types of drinks we serve. It requires logical brain and artistic stage producer’s mind.

    Performing Art show

    It’s a performing art show engaging with sensory experience, a big show ever can happened in the industry.

    There were multiple presentations completely changed industry and countless amount of idea shared across the world reshaping the cafe experience to publics.

    Competition stages are monuments that defines and give hints where the scene goes. In the end, only one national champion can move on to the world stage and World Champion out of 60+ national champions honoured a fame of World Champion title, no cash prize.

    It is incredible thousands of barista participating every year for this invaluable title. All this couldn’t be done without passion, dedication and craftsmanship. It is what we do and where we pour our life to.

    Most importantly, we enjoy and having fun through it, over sacrificing things in life. Imagine a cafe with dedicated guests, you’re interacting with them sharing stories of coffee, brewing, flavours, idea. What could be better cafe you are able to truly enjoy what you do for your life. 

    Where creative idea burns

    We believe creativity doesn’t always come in flash rather it slowly comes together like gathering pieces of puzzle. Making better coffee requires good observation and problem-solving mindset.

    Find problem, understand what to improve and find solution how to fix it. There are many things people recognize us in unique style such as Recipe calculator, Technical-Sensory evaluation protocol, high-dose shot, pre-grinding, degassing and resting, high-ratio brewing etc.

    We came up with those original method through this problem solving process, not because we are atypically creative or just be different to be different. 

    It’s like this,
    we tried to improve espresso texture and find the fines in serving cup making dry-texture, measure the hole size of basket and average ground particle size, found the solution to make more particles bigger than the hole size to reduce fines able to pass through the filter basket.

    We value someone who eager to learn and get better will be appreciated what we share.
    We do what we like, still we have preferred look how we perceived.
